  • 1 half sweet potato, cut into 1 inch cubes (1 medium sweet potato is ~ 2/3 lb and produces ~ 2 cups or 300 g of cubes and 1 cup or 200 g of puree)
  • 3/4 cup Black chocolate chips, melted (Be sure as Vegan/Dairy as necessary // we like to enjoy life)
  • 1/3 cup maple syrup
  • 1/8 teaspoonful sea ​​salt
  • 1 teaspoonful Vanilla extract
  • Place the sweet potato peeled in cubes in a steam basket on boiling water, cover and steam until it is very soft (it must be easy to push with a fork), approximately 10-15 minutes.
  • Meanwhile, it melt chocolate sparks by adding them to a small bowl or metal bowl and carefully placing the bowl on a boiling water saucepan. Hot, occasionally stirring with a spatula or a spoon, until they are melted and there are no lumps, approximately 5 minutes. It can also melt them in a heat -proof bowl in the microwave in increases of 20 seconds. Remove from heat.

  • Draw the sweet potato, measure 1 cup (200 g) of it (adjust the amount if it alters the default number of portions) and add it to a high speed blender with the maple syrup, the sea salt and the vanilla extract.   • Divide the mixture into 4 small molds or glasses (we like the shallow vessels like these) and gently shake the jars/cups to match the upper part. Refrigere for at least 1 hour before enjoying!
  • Serve cold by itself or cover with optional coconut whipped, shaved black chocolate and/or fresh berries.
  • Store the leftovers covered in the refrigerator for up to 4-5 days or in the freezer for 1 month (or more).

*If you use a vitamix with a broader base, the sweet potato will not become creamy in step 3, but if you mix a little more time in step 4 and scrape the sides, it works well! Or make a bigger lot!
