Freezer preparation tips

  • Use freezer bags when I can. Place flat to save space, then support them in vertical position once frozen to facilitate “food files” in the freezer.
  • Label everything. Write the name of the recipe, date and cooking instructions in the bag so that you do not have to scratch later trying to remember what is inside. (Click here to see the electronic book that includes labels!)
  • Freeze in portions. If you do not need a complete meal of family size every time, divide into two smaller bags when freezing them. That way just deflate what you need.

SUPPLY STORAGE TIPS

  • Refrigerator storage: Keep leftovers in a hermetic container in the refrigerator for up to 3 to 4 days. Reheat again on the stove or microwave.
  • Freezer storage: Most of these meals can also be freezed again after cooking. Let the leftovers cool completely, then save in safe containers to the freezer for up to 2 months.
  • Relive the leftovers: Add a touch of chicken broth, meat broth or even water by reheating to refresh things and keep the meat tender.
  • PORTION CONTROL: I love to freeze leftovers in containers of a single service for easily lunches later. They make an excellent option to take in occupied days.
  • The ingredients are your friend: Fresh ingredients such as cheese, herbs, green onions or sour cream give life to leftovers and make them feel new.

Lift the storage

  • Fridge: Store leftovers in hermetic containers for 3 to 4 days.
  • Freezer: Let the cooked meals cool completely before freezing. Store in baggage bags or containers to freezer for up to 2 months.
  • Reheat: Gently heat on the stove or microwave. Add a touch of broth, milk or sauce to keep everything wet.
