This green chilaquile recipe is fast and easy, tasty and all kinds of delicious. I like to make a homemade green sauce (but it works in the store) and cover it with a fried egg for a tasty Mexican breakfast.
I could write a thesis about how much I love Mexican food. From my tacos of Birria, Birria Ramen to fresh waters, Mexican food is really the best kitchen (perhaps next to Peruvian food hahaha). These green chilaquiles are the green version of my red chililares. They are brighter, more sour and super easy to make a Saturday morning. Let’s get into it!
Ingredients that will need for chilaquiles
- Green sauce I made my own homemade green sauce using tomatillos, garlic, onion and jalapeños. But I could use a bottle bought in the store, if you wish.
- Tortillas I love making my own tortilla chips because they become less soaked and tend to be more resistant to sauce. But do not hesitate to use the shop bought if you wish.
- Cotia This is a aged Mexican cheese made of cow’s milk and is from the city, Cotija, Michoacán.
- Cream. You can use Mexican cream either Simply dilute a little sour cream adding a squeeze of lime juice.
- Eggs. I like to fry an egg or two and add it at the top to feel like a full breakfast.

How to make green chilaquiles
- Green sauce. If you want to make the homemade version, the tomatoes, the onion, the garlic and the jalapeño. Then mix in the blender with coriander and some salt, until it is pleasant and soft.
2. Fry the tortillas. I do this in lots. And hot the oil at approximately 300F. Fry them for 1-2 minutes and transfer them to paper towels.
3. Heat the sauce. Add approximately 1 cup of sauce to the bottom of a pan. If you are using the sauce bought in the store, you would add a touch of broth or chicken water and mix it just to lose weight a little. Contact it over medium-low heat. When it is hot, add the fried potatoes.
4. Mix the chips in the sauce. And then place it. Add the cotija cheese on the top, spray cream, green onions and cover with the egg.
5. Serve it. Deny with cream, cotija cheese, coriander and coma immediately.

Chilaquiles Rojas consists of dry chiles, cooked with tomatoes. Green Chilaquiles is made with a tomatillo sauce that is generally known as green sauce. It is deliciously sour and spicy.
If you have ever been in Texas, you could have had breakfast crumbs. Migas means “crumbs” in Spanish and Texas, crumbs are usually made with fried tortilla chips, a red tomato sauce and scrambled eggs. I will say that they are similar to Chilaquiles but different. I like to think of them as their cousin.

To make tortilla chips:
For a cast iron pan, place over medium heat, add the neutral oil. Hot until approximately 300F.
Place in a handful of careless tortillas and fry until they are slightly golden and turn. This takes approximately 1-2 minutes to fry each lot. Transfer the chips to a bed of paper towels and sprinkle with salt immediately. Repeat with the remaining tortillas.
To make the Chilaquiles
In an average pan (I could use it, simply discard the oil). Add the green sauce to the bottom of the pan. Establish over medium-low heat. If you are using buying in the store, add a touch of water or chicken broth to lose weight a little. It seems to me that they are on the thickest side.
When the sauce is hot, add the chips and remove them until they are well covered. Divide between two bowls.
Fry the eggs in a non -stringent pan.
Decorate the chilaquiles with a drizzle drizzle or cream, a handful of crumbled cotija cheese, a little red onion into slices, a handful of coriander leaves and adorn with files. Add the egg to the upper part and serve immediately.
