This Peruvian cold snack originated in Huancayo, Peru; The place where my great -grandmother and my grandmother were born. Huancayo is a high city in the Andes, the place where the indigenous population lives, the Incas.

And although this dish is from Huancayo, Pope to the Huancaina is made and eaten throughout Peru. And every city, town, town has its own adjustments and additions to it. This version is what is very typical of what would see and was served in Lima, Peru.

What is Pope to Huancaina?
