These fried eggs of olive oil are the perfect crunchy breakfast. Frying the eggs in olive oil is a delicious and healthy shape of making them in a pan. Serve them with sauteed curly, roasted and coffee with frozen milk, for a full breakfast.
One of my favorite breakfasts in Los Angeles is in Jon and Vinny’s. First, his pancakes are a dream. But, I never ask for the pancakes, but I always go with the fried eggs of olive oil with stoofada strain. It is one of those breakfasts that makes you feel good after eating; I have energy and I am very happy.
When I got home, I knew I had to try it. And low and here, now I fried my eggs in olive oil all the time!
Is it bad to fry the eggs in olive oil?
The smoke point of olive oil is 380 to 410 F. That means that olive oil should not heat over 410F or otherwise it will lose many of its healthy properties.
With the pan fry the eggs in a pan, most likely the oil does not warm more than 350f, so it should be ready to start!
How to make fried eggs with olive oil?
- Add two to three tablespoons of olive oil to a non -stringent pan.
- I like to break the eggs in a medium bowl.
- And then, when the oil is hot, add the eggs to hot oil.
- Cook for approximately 1 to 2 minutes until the whites become solid.
- Using a spoon, incline the pan and place the olive oil and on the egg whites. This will cook them a little more.
- Depending on how you like your eggs, cook them a little more if you want whiter and firm yolks. I like easier, so I squeeze them at this time.
- Sprinkle the eggs with a few salt pin.

To do the curly one:
In a median pan or pot, place over medium heat, add few teaspoons of olive oil. When hot, add the curly, garlic, green onions, crushed red pepper and some salt pinches. Stir and cook until they are withered, approximately 3 to 5 minutes. Continue cooking until they soften. Give it a flavor and adjust the salt to your liking. Turn it very low and cover the pan or pot.
To make fried eggs of olive oil
In a small pan (I used an non-stick), placed over medium-high heat, add the olive oil. Break the first egg in a small bowl (I find it easier to add it to the pan in this way).
When the oil is hot, slowly pour the egg in the pan. Fry the egg for approximately 2 to 3 minutes, until the edges of the egg white are lace and crunchy and the egg yolks have been put. Gently transfer to a paper towel bed and repeat with the second egg.
