  • 3/4 cup almond flour
  • 1/4 cup grated coconut (without sugar)
  • 1 Tablespoon Lima zest
  • 23 Tablespoon lime juice
  • 3/4 teaspoonful Vanilla extract
  • 1 pinch sea ​​salt

To roll

  • 1/4-1/3 cup grated coconut (without sugar)
  • 1 Tablespoon Lima zest
  • To make the coconut coating, place the grated coconut and the lime zest in a small bowl or plate and stir to combine. Set aside.

  • To your food processor, add dates with a bite and mix until there are small bits or form a ball. Take out and reserve.
  • To the food processor now empty, add your raw anacardos, almond flour and grated coconut. Mix until a fine meal is achieved, about 20-30 seconds.

  • Divide the dated ball into four (or more) pieces and add it again together with the Lima zest and the least amount of lime juice. Mix until a sticky dough is formed. If it is too dry, add a little more of Lima juice (or water if the mixture is already limey enough). If it becomes too humid or sticky, add more grated coconut as necessary.

  • Take out ~ 1 tablespoon of dough (we like this scoop) and rolling it in a ball. Then roll the ball in the coconut lime mixture to completely cover. Place on a tray or baking dish and repeat until all your mixture is used. Enjoy now or refrigerate for a snack later!
  • Store the leftovers covered in the refrigerator (up to 1 week) or the freezer (up to 1 month).
