My favorite bar is one that serves snacks: peanuts, fried potatoes, an emergency hot dog, whatever. They are almost as important as drinks. In the cozy Brooklyn Spot Dynaco, there is usually a fresh cake behind the bar. Recently, while my girlfriend and I played cards, I had a portion that I had not yet tried: a ginger chocolate cake with a whipped cream cheese glaze. I have not stopped thinking about it.

Finally, I tracked Catherine Lloyd Burns, whose husband began the bar with her brother in 2013. Catherine Hornea all cakes for Dynaco and sent an email that I am sure she has seen it many times over the years. “Many people have asked for the recipe and I haven’t given it yet,” he wrote to me. “I don’t know if I will ever do it.” But! Next weekend, I grabbed a Guinness from the winery and gave him a turn. I do not even remember the last time I bake a cake, so doing one is an indicator of how much I loved Catherine in Dynaco and also how accessible is Nigella’s recipe. Catherine is right about Nigella’s cake; It is very, very good. Because I’m not Star Baker, mine looked a bit like a baking cake for children, but that does not reduce value to how well I knew. While trying Nigella’s cake, I was wondering if one of Catherine’s modifications was adding some fresh ginger, but both cakes are fantastic. I will definitely do it again. And you will probably go to Dynaco to see which season cake is serving now.
