What Do You Eat for Lunch?


My current hyper-fixing food is this easy refrigerator salad …

The other day, my friend Maddy hit a Mediterranean couscous. She is the type of person who looks out to the closet and takes a little of this and a little of that, and suddenly you are eating the best you have tried in years. (Are you an intuitive cook too? It seems very fun to see it).

Now we have a giant bowl of this couscous in our refrigerator, and I have been having it every day for lunch. Boys love it too. It is, as they say, infinitely riffpable, so you can add any ingredients you want.

Mediterranean couscous
8 lunch portions

extra virgin olive oil
Pearl 16 oz cuscous
Better than Bouillon (optional)
1 Chalota
1 lemon
Cherry tomatoes
6 Persian cucumbers
2 red peppers
Red onion
avocado
Rotisería or grilled chicken (optional, omits to do it vegan/vegetarian)
fresh dill
Dry oregano
Pinch of cinnamon
salt and pepper, to taste

Heat a little oil in a pot, then add the cuscous, toasting the grain until it was slightly roasted. Add 2.5 cups of water and approximately 2 teaspoons of better than Bouillon (optional). Revolve occasionally until the water is absorbed and the couscous is tender, adding more water as necessary.

Meanwhile, finely rejected 1 shallot and put it in a small bowl. Existenta the juice of a lemon on shalot slices to marinate.

Then, itch the tomatoes, the cucumbers, the peppers, the red onion, the avocado and the chicken and put on a large bowl.

Once the cuscous is cooked, add to the large bowl of chopped vegetables. Add an olive and seasoned oil glup with dill, oregano and a pinch of cinnamon (trust us on this!).

Add the shallot and lemon juice to the bowl, and season with salt and pepper to your liking.

Capers
Olives
Pickle
Rabies in slices
Grated carrot
Corn
Roasted vegetables
Chickpeas
Black beans
Hummus ladle
Crutones
