-
To cook the pasta, boil a large pot of water over medium-high heat.

Meanwhile, heat a large border pan over medium heat and add olive oil, sliced garlic and chopped shallot. Save for a few minutes until it is translucent. Add cherry tomatoes, water (or white wine), red pepper flakes and sea salt. Stir to cover them with garlic and oil. Cover the pan and cook for about 5 minutes until the skins of cherry tomatoes begin to explode.
-
Once your pasta water is boiling, add your pasta and cook the following package instructions. ** Make sure Reserve 3/4 cup (180 ml) of pasta water Before draining. **
-
Meanwhile, remove the tomato lid and add the chopped collty (if you use arugula or spinach, wait to add it to the last minute), drained and rinsed white beans, and the chopped kalamata olives. Save for another 5 minutes until the liquid has almost completely evaporated from tomatoes. Add 1/2 cup (120 ml) of the pasta water (adjust the amount if it alters the size of the lot) to the sauce and stir, letting it be cooked for 1-2 minutes. Pour the pasta into the sauce and stir to cover. Add the remaining pasta water if the mixture needs more liquid: the paste should be slightly covered in the sauce. Try and adjust the seasoning to your liking, adding salt to the taste or red pepper flakes to heat!

Serve hot with optional Vegan Parmesan cheese coverage. Store the leftovers in a hermetic container cooled for up to 4-5 days. Reheat in the microwave or briefly in a saucepan. Not friendly with the freezer.
