A few months ago, I got home with my five -year -old son after a very long Sunday and Schlepping. We were both in a bad mood and needed the time to go to bed early, and in no way was I prepared to cook. It was one of those nights in which you really want to ask for food to carry, but you did it the night before.

In a last effort, I grabbed a can of beans in the Cabinet tomato sauce, then I looked in the refrigerator something to push it a little. Mozzarella? Sure. I threw the beans in a pot with a handful of grated Mozz, along with a little spinach, warmed it for two minutes and then took it on a slice of sandwich bread. “Pizza beans!” I declared, because sometimes you have to sell it. And, frankly, my cabinet concoction did not seem particularly appetizing. Still, I thought I would know well, because tomato sauce and mozzarella usually do it. Now I do it regularly, even when I have more than five minutes to prepare dinner. It is warm and stuffed and super flexible and knows very well with the leftover vegetables you have hanging in your refrigerator, such as cauliflower or zucchini.

Five cheese beans
It serves 1-2

1 can of white or giant beans in tomato sauce (I used these, but any brand works! Just make sure it is salt sauce, No Sweet, like heinz baked beans)
1 little handful of mozzarella grated
1-2 Baby spinach cups, or chopped cauliflower, broccoli or any thick vegetable that has the product container hitting

Pour the beans in a small saucepan (be sure to scrape all that delicious sauce!), And put it over low heat. Spread the mozzarella on top and stir until it melts and everything is hot and sticky. Stir the vegetables for a minute, then turn off the fire.

Serve in tablespoons on a slice of sandwich bread, or only in a bowl. This makes a very abundant portion for one, or two, if he shares it with a five -year -old boy who is more tired than hungry. The good news is that it really takes five minutes. Instead of making a large lot in advance, I would suggest starting one and leave the pot uninhanded until dinner finally ends.
