This Danish Berry Pillow cheese is made with a rich mass and brioche style that is incredibly soft and spongy. It is full of a mixture of sweet lemon cream cheese and is covered with jam. Baked until golden and tender, this sweet mass of yeast hits the butter, spicy and sweet balance. I love these served along with my coffee with strawberry milk and coffee with milk with pumpkin spices.

If you love my Salado Parker Honey House rolls, then you will be obsessed with them. I adapted that dough to make these delicious and surprising Danish berries that are the most surprising for breakfast or brunch.
Danish Berry cheese ingredients
- Jam. I love to make fast jam (recipe below on the recipe card) or even wear dough bought in the store.
- Eggs. This will give the dough a delicious wealth that is unbeatable.
- Butter. The melted butter makes the dough soft and flexible. We love that.
- Cream cheese. These Danish are full of a cream cheese mixed with lemon, sugar and vanilla zest. I love to use my shouts of vanilla leftover from my homemade vanilla extract.

To make the dough:

In the bowl of a standing blender (with the hook accessory), add the flour, yeast and salt. Mix until it is combined.

In a small pot, place over medium-low heat, add the butter and, when it melts, pour the milk and honey. The mixture must be warm; Not too hot (no more than 120F or otherwise kill the yeast).

If you heat too much, simply let it stand at room temperature until it cools.

In a small bowl, add the egg yolks and the egg and gown until they are combined.

Pour the liquid mixture into the dry ingredients. Then, add the egg mixture to the flour mixture and love the machine at average speed for approximately 5-7 minutes, until it is soft and elastic.

The dough will be sticky and okay! Rub a medium bowl with approximately a teaspoon of oil (I used olive oil) and transfer the dough to the bowl. Cover with a clean kitchen towel and let it rise for 30-40 minutes or double their size (these times may vary depending on how warm/cold your home).

Alternatively, cover the bowl with a plastic lid or wrap and leave the refrigerator for 12 to 24 hours.

Divide the dough into 10 equal pieces. Each piece of dough will weigh about 100 grams. Roll them and shape the balls. And place six balls on the prepared bakery tray. To another baking tray, add the remaining four mass balls.

Form the mass balls, flattening them in a diameter of 4 inches. Sprinkle the bottom of a glass with dough and press in the center of the mass ball. This will make the center very thin.
To make the cream cheese filling:

In a medium bowl, add cream cheese, sugar, lemon zest, vanilla and pinch of salt. Beat until they are well, spongy and soft.
To fill and bake the Danes:

Add approximately a tablespoon of the cream cheese filling to the center of each flattened dough. Cover the cream cheese filling with a teaspoon of jam.

Brush the edges with the egg and sprinkle the Streusel.

Transfer to bake for baking for about 18-22 minutes, until it is slightly swollen and medium golden brown.
To do the glaze

In a small bowl, mix powdered sugar, milk, salt and vanilla. Sprinkle the Danes with the glaze just when they leave the oven.
